Ingredients:

  • 1 lb pork (pork shoulder or pork belly works great)

  • 1 bunch mustard greens (washed and roughly chopped)

  • 4 cups water or enough to boil the pork

  • 3 cloves garlic, minced (optional)

  • 1 small piece ginger, sliced (optional)

  • 1 tablespoon fish sauce (optional, or to taste)

  • Salt and pepper to taste

  • Optional: fresh chili or chili flakes for heat

Instructions:

  1. Prepare the pork: Rinse the pork and cut into large chunks.

  2. Boil the pork: In a pot, add the pork chunks, water, and if using, sliced ginger and a pinch of salt. Bring to a boil, then reduce to a simmer. Let it cook gently for about 45 minutes or until the pork is tender.

  3. Add mustard greens: Once the pork is tender, add the chopped mustard greens into the pot. Cook for about 5-7 minutes until the greens are wilted but still vibrant.

  4. Season: If using, add minced garlic, fish sauce, salt, and pepper to taste. Stir gently. For spice, add fresh chili or chili flakes if desired.

  5. Serve: Remove from heat and serve the boiled pork and mustard greens hot, ideally with steamed rice.
